A charcoal roast is a sequence of fires, rested months apart
Charcoal roasting is a sequence of separate fires, not one step, and each fire does distinct, measurable chemistry to the leaf. The practice also varies more across oolong styles than most tea copy admits.
A bag labeled "charcoal roasted" can mean one short pass over the coals, or a fire repeated three times across months of rest, and the difference shows up directly in the cup, not on the label. A charcoal roast is not one action. It is a sequence of separate fires, each at a different temperature, each doing different and measurable work on the leaf, with the leaf resting between them for weeks or months before the next one. For a serious Wuyi yancha, roasting is close to definitional. For most other oolong, it is optional, and increasingly rare.
The first fire moves fast and hot
The traditional method starts with a pit (beikeng, 焙窟): burn wood down to coals, then bury them under a layer of ash (覆灰) to convert an open flame into steady, indirect heat (wuyishantea.com2). Woven bamboo baskets (beilong, 焙笼) sit roughly 27 centimeters (11 inches) above the buried coals. One documented pit measures about 54 centimeters across, set in a row with roughly 26 centimeters between neighboring pits.
The first pass, called zou shui bei (走水焙), literally "walking off the water," runs hot and short: roughly 150°C (about 300°F), 4 to 5 minutes per basket, about 700 grams (a pound and a half) of leaf a batch, until the bottom layer is half-dry (wuyishantea.com2). The roaster turns the leaf once, then moves the basket to a cooler station down the line, hence "walking." This stage targets moisture, not flavor: driving off surface water fast enough that the leaf does not sit wet and stale on low heat.
The second fire is slower and does the real work
Once the leaf is dry enough to handle in bulk, it goes back over ash-covered coals for the full fire (zuhuo, 足火): larger batches of 2 to 2.5 kilograms (about 4.5 to 5.5 pounds), still around 150°C, but for roughly 2 hours instead of minutes, with a loose cover over the basket to hold the heat in and slow the airflow (wuyishantea.com2). Heat is tuned the entire time not by feeding the fire but by scraping the ash layer thicker or thinner over the coals, the same control principle described independently in an account of traditional Taiwanese charcoal roasting, where the ash is spread over the lit coals rather than the wood buried beneath it: "if we spread the ash out too thinly, the roasting temperature will become too high and hurt the tea leaves, and if we do it too thickly, the temperature won't be high enough to properly roast the tea" (Wang Family Tea7). This is why a good roaster is judged on ash management, not fire management.
A third stage, dunhuo (炖火), a long, gentle "stewing" fire, follows for teas meant to carry real character rather than just get finished (永鹏茶业1). It runs cooler and longer than either of the first two, and it is the stage most tied to the final cup's depth rather than its dryness.
Why serious Wuyi tea gets roasted more than once, and why more is not simply better
A single round rarely finishes a serious yancha. The ordinary range cited by roasters is 2 to 3 rounds, occasionally a fourth, with roughly a month of rest between each so the tea can shed the raw "fire smell" before the next pass (Zhihu14). Heavier styles rest longer: an English-language account of firing levels puts a mid-fired yancha at a year of rest before it is ready and a high-fired one at three years before the roast has genuinely mellowed. The most robust mainland material, from the Zhengyan core, is roasted for as much as 20 hours in a single session; a separate Hong Kong tradition is described as sometimes even more intense, though without a stated duration, and rested at least a couple of years before drinking (TeaDB8).
Marketing that counts roasts as a virtue on its own, "eight fires," "nine fires," runs into skepticism from roasters themselves. One widely read account poses the escalating-fire-count claim as a question rather than a selling point: a tea pushed through unnecessary extra rounds is more often stripped and flat than improved (Zhihu15). Fire count is a production fact, not a quality score.
What the heat is actually doing to the leaf
Below roughly 165°C (about 330°F), sugars and amino acids in the leaf undergo the Maillard reaction, the same browning chemistry that builds crust on bread, producing the toasted, nutty, caramel notes a roasted oolong is chosen for. Above about 180°C (about 355°F) the leaf starts to pyrolyze instead, charring rather than browning, and the result reads as flat and ashy rather than roasted (TeaTrade10).
A 2021 study on Tieguanyin measured this tradeoff directly rather than by taste alone. Roasting at 105°C (about 220°F) for 1, 3, and 5 hours, followed by a 130°C (about 265°F), one-hour "aroma-enhancing" pass, dropped epigallocatechin from 35.69 to 30.37 milligrams per gram and epicatechin from 7.22 to 6.14, while gallic acid, which the study links to a sweet aftertaste, rose from 0.227 to 0.392 milligrams per gram. L-theanine collapsed from 3.726 to 0.715 milligrams per gram under the hottest pass. Floral volatiles, beta-ionone and nerolidol among them, fell sharply, and alpha-farnesene disappeared from detection entirely, while Maillard products, 2,5-dimethylpyrazine chief among them, rose in their place (PMC12). Roasting does not add flavor on top of the leaf's original character. It trades one set of compounds for another, on a schedule a lab can now actually measure. A separate 2024 study on charcoal-roasted Shuixian, fired at 120°C ± 5°C (about 250°F) for a full 12-hour session with samples pulled every 2 hours, found the aroma peaked at the 10-hour mark, not at the end of the burn, meaning a roaster chasing "as long as possible" overshoots the actual optimum (Journal of Food Composition and Analysis, 202413).
Moisture is the other axis roasting controls. Finished oolong is dried to 3 to 5 percent moisture by weight, a level narrow enough that Taiwanese researchers built temperature-and-humidity sensor arrays specifically to measure it during processing and storage, because moisture outside that band changes both the tea's shelf life and its measured aroma and taste (Sensors, 201411).
Why a tea that is already finished gets roasted again
Re-roasting (fubei, 复焙) is not a repeat of the original process. It runs cooler, typically 100 to 120°C (about 210 to 250°F) for 1 to 2.5 hours rather than the original fire's temperatures, and its target is not the leaf's original character but what storage has done to it since (Sohu4). Tea that has picked up ambient moisture reads as thin in flavor and dull in aroma, a defect roasters call "returning green" (fanqing, 返青), and a light re-roast drives the moisture back out and resets it (Sohu4). One tea company's own household guidance is blunter about when to bother: a well-settled yancha with no obvious sign of returning green or dampness does not need re-roasting at all (wuyishantea.com3).
That is a genuinely contested point. Some sellers recommend re-roasting on a fixed annual schedule; a widely shared rebuttal calls the "one re-roast a year" rule a misconception outright, arguing that re-roasting on a calendar rather than in response to an actual problem drives out compounds the tea would otherwise keep (Sohu5). Both camps agree re-roasting is a repair tool, not routine maintenance. They disagree on how often the repair is actually needed.
The failure mode in both directions is real. Push the temperature or the frequency too far and the tea loses substance, not just moisture, a defect roasters name outright, "the roast hollowed it out" (bei kong, 焙空), distinct from simply scorching the leaf (Da Hong Pao Wang16). The working principle, repeated across roasters, is to read the specific leaf rather than apply one fixed schedule to every batch, summed up in a saying rather than a rule: kan cha bei cha (看茶焙茶), "roast the tea according to the tea" (In Pursuit of Tea17).
Not every oolong takes fire the same way
Charcoal roasting reads as a defining feature of oolong in general, but the practice is unevenly distributed across the category. For Wuyi yancha, multiple rounds of real fire, spread over months of rest, are close to the traditional standard rather than an option.
Anxi Tieguanyin is the opposite case. The modern mainstream style sold under that name is lightly oxidized and unroasted, sold specifically as the "fragrant" style; a charcoal-roasted Tieguanyin is now explicitly marketed as the traditional, minority alternative to that modern norm, not the default (Curious Tea9). Taiwanese high-mountain (gaoshan) oolong sits closer to the Anxi pattern than the Wuyi one: the dominant modern philosophy protects the tea's floral high notes and often opts for minimal fire, so where charcoal roasting is used at all it is comparatively light and occasional rather than Wuyi's repeated months-long cycle (Goodtea.eu6).
Whether a given oolong is roasted at all depends on which style it is, not on a rule about the category as a whole.
