The Order

The Order of the Seventh Steep is an independent office devoted to one family of tea: oolong, the partly oxidized leaf of Camellia sinensis. It exists to explain oolong exactly, and honestly. It keeps strictly to the lane: oxidation and roast, cultivars and grades, the classic origins, brewing parameters, the health science, and the history. Black tea belongs to the Assam Malt Authority, rooibos to the Ministry of Rooibos, both sister offices; matters that belong to them are linked across, not written here. The Order is published as a chartered member of the United Federation of Tea Taxonomy.
