Oolong Oxidation and Roast

The two axes that define an oolong. What enzymatic oxidation is and how it is arrested by kill-green, why oolong sits partly oxidized between green and black, and how roasting is a separate step applied afterward.

Two axes define an oolong, and they are not the same axis. The first is oxidation: how far the enzymes in the leaf were allowed to work before heat stopped them. The second is roast: how much fire the finished leaf took afterward. A lightly oxidized, unroasted Tieguanyin and a Wuyi yancha pushed hard on both axes, oxidized deep and fired dark, are both oolong, and the distance between them is the distance between these two decisions. Learn to read them separately. Conflating oxidation with roasting is the most common error made about this tea, and it will mislead you on every cup you meet.

Oxidation is enzymatic, and it starts with a wound

Oxidation is not the leaf sitting in air and browning like a cut apple by accident. It is a specific enzymatic reaction1. The leaf carries an enzyme, polyphenol oxidase (PPO)2, held in one cellular compartment, and it carries catechins, the colorless polyphenols that make up much of a fresh leaf's dry weight, held in another. So long as the cell wall is intact, the two do not meet. Bruise the leaf, and they do. When rolling or shaking ruptures the cell structure, PPO comes into contact with the catechins and oxygen, and enzymatic oxidation begins at once. The main effect of PPO is to oxidize catechins into theaflavins, and further reaction carries them on to thearubigins, the yellow-to-red-to-brown pigments that give an oxidized cup its color and much of its body. This is why the bruising step, done in oolong by tossing and shaking the withered leaves, is the step that sets oxidation running. No wound, no oxidation.

Understand the word "fermentation" here as a misnomer of long standing. There is no microbe and no yeast. The reaction is the leaf's own enzyme acting on the leaf's own compounds. When a source calls oolong "semi-fermented," read "partly oxidized."

Kill-green stops the clock

Left alone, the enzyme would run until the catechins were spent, and the leaf would become, in effect, a black tea. Oolong is defined by stopping partway, and the stop is achieved by heat: a step called kill-green, or fixation, from the Chinese shaqing (杀青), literally "killing the green." This is the hinge of the whole craft. The maker chooses the moment to apply it, and that moment fixes the oxidation percentage. Early fixation, a green and floral oolong. The oolong spectrum

Oolong is the partly oxidized category, and "partly" spans a wide band. The useful figures, cited as ranges because makers and cultivars vary:

  • Lightly oxidized, roughly 8 to 25 percent. Bao zhong (Wenshan pouchong) sits near the floor, around 8 to 12 percent, close enough to green tea that its liquor is pale and its aroma high and floral. Modern "green style" jade Tieguanyin lives here too, near 10 to 25 percent.
  • Medium oxidized, roughly 25 to 60 percent. Traditional Tieguanyin and Dong Ding fall in this middle band. The liquor deepens toward gold, and orchid and stone-fruit notes come forward as the raw green recedes.
  • Heavily oxidized, roughly 60 to 80 percent. The Wuyi rock teas, yancha, are made here. Da Hong Pao is commonly cited at 60 to 70 percent. The liquor is amber to reddish, the character honeyed, dark-fruited, and thick.

Oxidation level shapes the cup before anything else touches it. Lower oxidation preserves the bright, vegetal, high-floral top notes and a greener liquor. Higher oxidation trades those away for depth: amber color, fuller body, and the honeyed, fruited register that comes as catechins press on from theaflavins into thearubigins. When you plan how to brew a given oolong, its oxidation is the first thing to know, because it tells you how forgiving the leaf will be and where its flavor lives.

Roast is a separate step, applied after

Roasting is a distinct post-processing step, applied once the tea is already made: withered, bruised, oxidized, fixed, rolled, and dried into rough tea (maocha). By the time a leaf is roasted, its enzymes are long dead and its oxidation is long finished. Roasting cannot and does not add oxidation. What it does is apply controlled dry heat to the finished leaf, driving Maillard browning and pyrolysis, reactions of sugars and amino acids under heat, which create new aromatic compounds, deepen color, and drive off residual moisture. Oxidation is enzymatic and happens to the living leaf. Roasting is thermal and happens to the dead one. Two different chemistries, two different stages, two different axes.

The traditional method is charcoal roasting, hongbei (烘焙). Masters build charcoal pits and cover the glowing coals with white ash to govern the temperature, working the baskets in a hot room and turning the leaf on a schedule; a single session commonly runs 8 to 12 hours, with the leaf flipped roughly every half hour. Electric ovens do the same work with a dialed setpoint and far less labor, and much everyday roasted oolong is made that way. Charcoal is prized for the even, penetrating heat and the character it leaves, and it is a great deal harder to do well.

Why roast at all? To develop flavor the green leaf does not have, to add keeping quality by removing moisture, and to build the toasted, nutty, caramel, and roasted-grain notes that define the roasted styles. The intensity is a spectrum of its own:

  • Light roast keeps the vegetal, floral, and buttery notes largely intact, reflecting minimal Maillard browning.
  • Medium roast brings honey, stone fruit, and toasted-nut accents forward as moderate heat and time do their work.
  • Heavy (dark) roast takes several rounds of firing, sometimes spread over months, into deep roasted, mineral, and dark-caramel character.

Re-roasting and aging

A well-roasted oolong is not finished when it leaves the fire. Fresh off a roast it carries a raw "fire flavor," and it must rest for several weeks, sometimes months, to let that dissipate and the moisture redistribute before it drinks at its best. This is why heavy roasts are built in rounds rather than one long burn: fire, rest, fire again. The same rest makes charcoal-roasted oolong a strong candidate for aging. It goes on changing as it settles from the roast, and keepers of aged stock have long re-roasted their tea periodically, a light pass to drive off humidity pulled in from storage and to refresh the leaf. Aging and roasting braid together here in a way they do for few other teas.

Hold the two axes up together and any oolong resolves. A greener Tieguanyin: low oxidation, little or no roast, so it reads floral and fresh. A classic Wuyi yancha: high oxidation and a heavy hongbei fire, so it reads dark, mineral, and deep, its "rock rhyme" (yan yun) built from both axes at once. When you meet a new oolong, ask the two questions in order. How far was it oxidized before fixation, and how much fire did it take afterward. Answer both and you have placed the tea.
