Not Every Rock Tea Survives to Its Seventh Steep

The Order's Rule says the seventh steep reveals a Wuyi rock tea's finest character. A 2020 chemistry study brewed real Dahongpao fourteen times to find out for which grade that is actually still true.

The Order's founding claim is a number: the seventh infusion surrenders a rock oolong's finest character. That is the Rule, settled in 1956 by masters arguing over cliff tea and kept ever since. It is also, as written, a testable claim about a beverage, and the Order does not exempt its own Rule from the discipline it demands of a novice.

So it must be said plainly. The Rule is correct for the tea it was almost certainly written about, and it is wrong for most of the rock tea now sold under that name. The difference is not brewing skill. It is terroir grade, and the gap between grades is wide enough that the seventh steep sits comfortably inside the window for one and well past the end of it for another.

What was actually measured

A 2020 study in Scientific Reports1, run out of the Institute of Tea Science at Nanjing Agricultural University, brewed Dahongpao fourteen consecutive times to find out where the tea gives out. Nine samples, drawn across the three traditional Wuyi terroir grades: Zhengyan from the core cliff zone, Banyan from the semi-core zone, Zhouyan (called zhoucha elsewhere in the literature) from river-alluvial land outside it. Parameters were fixed and unromantic: 5g of dry leaf to 110 mL of water, 100C, steep times escalating from 20 seconds on the first infusion to 380 seconds on the fourteenth. Total contact time, 38 minutes.

At every infusion the researchers took three readings: chemical composition (caffeine, ester and non-ester catechins, free amino acids), liquor color by colorimetry, and a trained panel's sensory score. Then they fitted a Random Forest model to predict how many infusions each grade can actually support. The study's stated reason for doing this was that existing claims about how many times a Dahongpao can be brewed were circulating without reference to grade at all.

Sensory quality peaked at the second infusion, across every sample, then declined. What separated the nine samples was not where they peaked but how slowly they fell after.

The three grades, and where the seventh steep lands in each

The panel's working threshold was 80%. Above it, the infusion is still worth drinking. Below it, the leaf is spent, whatever the pot suggests.

Zhengyan samples held above 80% the longest as a group. The best of them, A3, cleared the threshold through the tenth infusion. Banyan samples held to roughly the ninth on average, though the single strongest sample of any grade, B3, reached the eleventh, edging out A3 on that one measure. Zhouyan fell fastest and hardest: C1 held only to the fourth, C2 and C3 to the sixth. The model's final recommendation, per grade: nine to ten infusions for Zhengyan, seven to nine for Banyan, four to six for Zhouyan.

Set the Rule against those three windows.

For Zhengyan, grown in the crevices and ravines of the roughly 70-square-kilometer (about 27-square-mile) core zone, the seventh steep is mid-window. Two or three good infusions still remain after it. The Rule is not merely satisfied here, it is conservative.

For Banyan, it is the first infusion of the window's last third. Defensible. Nothing to correct.

For Zhouyan, the everyday grade grown on river-deposited soil in converted paddy and vegetable land, that infusion does not exist as a recommendation. The tea was finished at four to six. A novice following the Rule with Zhouyan leaf is pouring a seventh cup from a leaf that stopped clearing the threshold one to three infusions earlier, and tasting the Rule's failure while assuming it is his own.

What is leaving the leaf, and when

The decline has a chemistry, and it is not uniform across compounds.

Caffeine leaves first and fast. About 70% of the total was already in the cup by the third infusion, and by the fifth it was nearly undetectable, a straightforward consequence of its water solubility. Whatever that seventh infusion carries, in any grade, it is not caffeine in any quantity.

Catechins behave differently. Ester catechins peaked at the second infusion in nearly every sample, the same point sensory quality did, with one exception: the lowest-grade Zhouyan sample, which peaked a beat later, at the fourth. From there they declined gradually but stayed detectable through all fourteen infusions, a persistence the authors note is markedly longer than what has been reported for green or white teas. Free amino acids sat between the two extremes, holding above roughly 0.2% through about the eighth infusion, the most stable of the three classes.

The liquor color tracks the depletion visibly. Across the fourteen infusions the cup brightened and shifted greener, less yellow, consistent with phenolic compounds progressively leaving the leaf. Color saturation held up longest in the Zhengyan samples, the same grade the panel scores favored. A drinker paying attention can watch the endpoint approach without instruments. The Order takes no position here on rock rhyme, whose cause remains genuinely unsettled, and notes only that color is measurable and yan yun is not.

A record older than the Rule, and more modest

The Order's number is not the first anyone wrote down. In 1792, the poet and gastronome Yuan Mei recorded his own verdict on Wuyi tea in Suiyuan's Recipe Manual3, after a season on the mountain converted him from a skeptic. His line on durability: 且可以瀹至三次,而其味犹未尽, that it could be infused up to three times and its flavor still not exhausted.

Three infusions impressed a well-traveled eighteenth-century critic enough to record it. The Rule claims seven. The 2020 panel puts true Zhengyan at nine to ten. None of the three numbers is wrong; they are three different floors, set by three different instruments, over more than two centuries, against tea that was never claimed to be the same grade. Yuan Mei never says which zone his leaf came from, only that it was "grown at the summit of Wuyi mountain," a description that reads as cliff tea but proves nothing about crevice or ravine. Traditional Wuyi grading2 draws exactly the line the study measures: Zhengyan from the core zone, particularly the three gullies and two ravines, then Banyan in the wider mountain area, then Zhouyan on the alluvial flats, then outer-mountain tea beyond. The grades exist because the tea from them is not the same tea, a distinction the trade has kept for generations, no colorimeter required.

Each number, read against its own moment, understates rather than contradicts the one after it. Three was conservative for a mountaintop tea in 1792. Seven was conservative for the cliff tea two masters were drinking in 1956. Nine to ten is what a panel and a Random Forest model now put on true Zhengyan. The claim has only ever grown more precise, never reversed.

The boundary was drawn before the water was heated

The Order revises nothing about the seventh steep. It states the conditions the Rule was always operating under, which the 1956 dispute did not need to state because the men arguing were drinking cliff tea and knew it.

For Zhengyan-grade Wuyi rock oolong, the seventh infusion is well inside a window that runs to nine or ten, and the Rule holds exactly. For Banyan, it holds within a window of seven to nine. For Zhouyan, the window closes at four to six, and by then the panel's own threshold has already been crossed for one to three infusions.

Brew fourteen times if you wish. The catechins will still be there. Whether anything worth attending to is still there depends on which side of the core zone boundary the leaf grew, and that was decided long before the water was heated.
