Oolong Carried the Least of a Compound Class That Should Have Favored Green Tea

A 2026 study measured advanced glycation end-products, the same compounds tied to aging and inflammation, across five tea types. Oolong came out lowest of all five, and the antioxidant story that usually explains oolong's health claims does not explain why.

The lede

A 2026 study measured advanced glycation end-products (AGEs), the compounds tied to aging, inflammation, and diabetic complications, across five tea types and found oolong lowest of the set, below green tea, white tea, black tea, and dark tea (Niu, Sun, Jiang and Zhu, 20261). The result resists the usual explanation. The same study reports that high catechin content did not inhibit AGE formation, and that catechins may be one contributor to elevated AGEs. So the antioxidant story that props up most of oolong's health claims does not account for this one. The paper measures the ranking. It does not explain it.

What an AGE is, and why it earns attention

Advanced glycation end-products form when sugars react with proteins or lipids under heat, the Maillard reaction that browns a roast, and they also form inside the body over time. A 2016 systematic review of randomised controlled trials found that a diet high in AGEs raised circulating TNF-alpha and AGE levels in both healthy people and those with chronic disease, promoted markers of oxidative stress, and, in diabetic patients, tracked with elevated cardiovascular markers (Clarke, Dordevic, Tan, Ryan and Coughlan, 20162). The wider literature associates AGEs with aging, diabetic complications, cardiovascular disease, and neurodegenerative disease. The reviewers are careful, and so are we: they state plainly that more high-quality trials are needed, and that causal proof in humans from diet specifically remains limited. This is evidence, not a settled verdict, and the finding below should be read against that limit.

What the study measured

The 2026 paper used ultra-high-performance liquid chromatography tandem mass spectrometry (UHPLC-MS/MS) to profile 13 AGEs derived from lysine and arginine across green, white, oolong, black, and dark tea. Nine of the 13 were detected in every sample. The predominant class across all five was the arginine-derived methylglyoxal-hydroimidazolones, the MG-Hs. On total AGE content the ranking was statistically significant at P below 0.05: green tea and white tea highest and level with each other, then dark tea, then black tea, then oolong at the bottom. Oolong held the lowest total AGE content of the five.

Then the twist, stated by the authors themselves. High catechin content did not effectively inhibit AGE formation, and catechins might be one contributing factor to elevated AGEs. This matters because catechins are the antioxidant workhorses the marketing usually leans on. If the protective-polyphenol story held here, the most catechin-rich teas should sit lowest. They do not. The paper leaves oolong's rank without a stated cause.

The heat writes AGEs into the leaf

There is good reason to expect any tea to carry AGEs, because the processing itself makes them. An earlier study from this same research line, with Hongkai Zhu a co-author on both it and the 2026 comparison, dried black tea at 90°C (about 194°F), 120°C (about 248°F), and 150°C (about 302°F) for one hour and measured AGE formation directly (Zhang, Zhang, Ye and Zhu, 20203). MG-H1/3 was the major AGE formed at the higher temperatures, reaching 39.66 micrograms per gram at 120°C and 58.88 micrograms per gram at 150°C, above CML, Nε-carboxymethyl-lysine, at the same settings, which sat at 19.86 and 23.71 micrograms per gram. AGE levels rose with drying temperature. Argpyrimidine appeared only at 150°C. The drying step is a real, measured source of these compounds, at least for black tea, at least for this class, which sharpens the puzzle rather than settling it.

Why oolong ranks lowest

Oolong is partially oxidized and often roasted, so it takes real heat. Green and white are unoxidized, yet green tea is fired or dried and white tea is still heat-touched, and both landed highest. Black and dark are fully oxidized or fermented, and sat in the middle. Read down that list and the ranking does not track cleanly with oxidation, and it does not track cleanly with heat exposure either. That is an observation, not a mechanism; the paper makes no such claim.

This is the kind of result that refuses a tidy story. A single processing variable does not order the five teas, which is likely why the authors profiled the composition and left the mechanism to future work. A cause without a citation stays out of this piece; when one is published, it earns its own paragraph.

Where this sits

One narrow biomarker is not a verdict that oolong is the healthiest tea. The Rule has covered this ground three times before. We examined oolong and blood pressure through the GABA claim, oolong and blood sugar, and oolong and weight loss, and each time the reading was mixed or limited, not a clean win. The AGE finding fits that pattern exactly. It is real, it is measured to the microgram, and it is a single line in a Chinese-language paper with an English abstract, one assay across five teas, its own mechanism unresolved.

Oolong carried the least of one compound class, for reasons the study did not establish, in a field where diet-to-disease proof in humans is still thin. One assay, five teas, a single line at the bottom of the ranking: measured, and nothing claimed beyond it.
